Paul was there on my first day of trading when a steady pair of hands and third person perspective was just what I needed. This is invaluable. Not only can he cook delicious, beautiful examples of every kind of cuisine, but he can also help with the business side of things like menu design, costing, mise en place and a whole host of of considerations you might not have even thought of yet!
