Paul was there on my first day of trading when a steady pair of hands and third person perspective was just what I needed. He was able to provide advice on equipment and even helped speed up service in terms of how I presented my food.  The difference between Paul and other street food traders I've worked with is that Paul brings 20 years of top cheffing experience to the truck/gazebo. This is invaluable. Not only can he cook delicious, beautiful examples of every kind of cuisine, but he can also help with the business side of things like menu design, costing, mise en place and a whole host of of considerations you might not have even thought of yet!

Whilst doing some research on setting up our business, we came across Paul and his lovely H van who was trading at London Southbank. Although he was very busy, he still afforded us the time to talk to us giving us some very helpful and effective advice towards setting up our business and our own h van.
